The Chardonnay is a light bodied, crisp and refreshing, a little reminiscent of a Chablis, but with a California flair. Since this wine did not go through malolactic fermentation it allows the fruit components to play a larger role. A small amount of French oak adds an interesting complexity to the wine giving it extra depth without being overpowering. The first thing you may notice is an enticing pear aroma followed by hints of vanilla and honey. Green apple, citrus and nutty flavors linger and lend themselves to a crisp, but smooth finish. The first thing you notice about the wine is its deep golden color. When you raise the glass to your nose the aromas of baked pineapple covered in a caramel sauce is the first thing to hit you. As you let your nose and mind wander a little further, you can start to pick out some hints of soft tropical fruit like banana and mango. On the palate, the wine has a velvety smooth texture that completely fills your mouth with hints of spicy-molasses and has a finish that lingers well after the wine is gone.
